With the massive overhead of having to run several plugins in order to use Salient, not to mention 3rd party plugins like WP Bakery, what debris is left behind in our database when we uninstall your theme along with its associated plugins?

We'll keep an eye on Salient as you are obviously talented developers with a great sense of aesthetics but the theme is not for us right now, sorry.
When I have to insert custom CSS to remove rounded corners from photos, rather than selecting that as option in your page builder, that's a failure straight out of the block in my view.
I recommend that you update and possibly rewrite your help docs as it would save you tons of time with support requests, and you could make better use of that time improving the theme and bringing it up to date.
See Blocksy Pro, they've built a theme that is mostly configured via the WP live customizer, their header and footer builder is a thing of such beauty. Only problem is: their Woo starter theme isn't anywhere as nice as your Robust demo.

Once you have uninstalled the theme and the plugin, you can go ahead and delete the pages and posts as well to clear all data.

I am afraid we don't have a list of the Database values present after uninstalling Salient and the Bundles plugins .
You can however use this plugin or similar to clean your database: https://wordpress.org/plugins/wp-optimize/ or even reset it using this plugin: https://wordpress.org/plugins/wordpress-database-reset/ .
