I'm looking to refresh my website and wanted to use the "Photography" theme included in this license. I've realised that my support has expired and so I had renew my support. I can't seem to find the dummy data relating to this theme. I think I have version 7.5.02 and unsure how to update to 7.6 - would this be the reason why?

Yes you need to update to version 7.6 and VC 4.12.1 as the Photography Demo was released with it .
