I am not sure if this is possible but I am wondering if:
1. Could I ADD a gallery page that will show its name on the Project Category filter?
2. Basically I want a page that will show only its button under the project filter category header but it does not show if chosen the option of "ALL" filtered.

No i am afraid its not possible given how the Filters work and would likely require custom work .
