Is it possible anywhere to disable the site header (logo + menu) completely? My client is basically looking for a very simple homepage until the site is fully built (kinda like an 'Coming Soon' page) without any logo or menu, just an image and their contact information.

You could do this by editing the page and going to Page attributes and selecting the no header (or no header and footer if you'd like to remove the footer as well) template from the Template dropdown (see screenshot).
