It's never really advised to update WordPress without first ensuring that your themes and plugins are fully compatible. It's usually best to wait for an update for those before updating WordPress as doing so without your plugins and themes compatible will cause issues as you're having now.
With that said, I'm going to advise that you use the All In One Migration plugin to do a full site backup, then use WP Downgrade to go back to the previous version of WordPress.
That should get things working properly again.
If that's the only issue, then you should be able to upgrade after CF7 updates.
I then rolled back to a working backup, upgraded Salient & Salient VC. But then one I install Woocommerce the issues seems to of returned to the console.

Hope you are doing well today. Sorry to hear that you are having some trouble. I have checked the issue and found that you you have lots of scripts which is sensitive to minification. Most of them get broken while minification is enabled. As you have number of scripts from your theme and plugins, it's difficult to track down the sensitive scripts. If you want to use minification then enable that and disable all minify and combine option from all CSS and JS. Then enable one by one to make sure your site is not breaking. That could be the safest way to use minification without breaking any script.

Ok, so I restored the full site from a backup (which was on 4.7.5) then just upgraded Salient. All seems to be good now. thanks

Ok I've done that and the issue has returned.

It would appear not.
This setup was fine before the upgrade...
No PHP issues logged. But works fine if I deactivate either Woo or Contact Form 7?
But again only became an issue after upgrading to Salient 8
