Turns out it's a conflict with the plugin WP Mail Logging and the latest versions of Salient. Not sure why it's causing those options to vanish from the Typography options.
Edit: Looks like both Salient and WP Mail Logging use the Redux Framework, perhaps there's some overlap causing a conflict.?

The 'Text transform' and 'Letter Spacing' options seem to have vanished from the Typography options. (Version: 8.5.3)
Have they been removed?
Only noticed today as when I saved my salient options today it removed uppercase / letter spacing styling I had applied.

Try installing the Standalone Redux Plugin and check : https://wordpress.org/plugins/redux-framework/ .
