Seems like some conflict. Have you tried plugin compatibility test. Please try deactivating your third party plugins one by one while clearing your cache each time in order to figure out if one of them is causing this.
I would like to change the thumbnail aspect ratio from width: 600 x height: 403, to width: 600 x height: 600.

Ok, I figured it out. I just uploaded a custom image of 500x500 to the portfolio page and it is finally working. Whew!
