In the context of my page, when you click on a portfolio item (video), it pops up as a light box, and I'd love to add more project information underneath the video if possible.
Additionally, but less important, is it possible to have portfolio items pop up as photos only?

I'm afraid from the options you have this not possible on the lightbox. You might require some custom work done to achieve that.
