In the Text with Icon element, the options for the icon are different to the options for just an icon by itself (there seem to be far fewer icons, for example I want to use the Font Awesome Thermometer icons, which can be found under the Icon element but not under the Icon with Text element). Is this a known bug / is there a workaround?

This is not a bug , rather a limitation at the moment. Though have noted it in the Wishlist for upcoming updates.
