Is there a way to change the dimensions of the masonry grid defaults? When I am at small screen sizes at "wide" it collapses into a single column (see attached). Is there a way to have it do this at all screen sizes?
No i am afraid not though you can set the Images without being cropped to the specific Sizes if you use the Custom Thumbnail Option here : http://prntscr.com/kisfgf .

Yes though it would cause layout issues and there is no Option to resize the image automatically using the Theme Options.
Try using Third Party Plugin such as "Essential Grid" if you have a copy or any other that suits your need.
