In settings > reading I can not find the right options. I only have one option for the index page and not any further options to display the blog except as a index page. Please help me!
You need to create new pages and use the Page Builder to add a blog section in it . Save and Publish , then it will show up in your settings and you can select it as the index page .

I would like to assign my blog as a page and not as a index page. For example www.lorumipsum/blog and not www.lorumipsum.com.

Yes, Simply install the "Codestyling Localization" Plugins from the WP Plugins menu from where you can add/edit and change your translations.
