What is the best way to add a gallery to portfolio pages? I ask this as your youtube videos seem to be out of date.
My results have found that using the VC Image gallery set to the Nectar slider seems to crop images when the page is resized. While Basic slider results in very blurry images as it seems to produce a new resize image based of what ever dimensions I set for the slider.
Please try using the Flexible Slider Height option in Nectar Slider.
Also when using the flexible slider height option you have to enter the slider height based on how big your images would be at for eg 1600px wide - this will ensure the scaling is perfect with no clipping.
The flexible slider height option makes the Nectar Slider respond perfectly to ensure there's no clipping on any view - leaving it off will cause the height of the slider to change only once per every viewport change (desktop, ipad, mobile) and clip variously between them.
Still getting some cropping on the left and right. I think its because the aspect ratio of my image is a slightly wider then the Slider's container. Is there a recommend size / aspect ratio I should use? My test images are 1000x625 (will be replace with hidpi version latter).
All so just to confirm, is it better practise to make a new Nectar Slider slides in the admin pannel for portfolio galleries? Or can I just attached the images to the post and use the Image Gallery via the Visual Composer and set it to Nectar Slider? I'd prefer the latter as the images are already attached to the post due to coming from a different theme.
I am afraid we dont have any other option . Try adding it to a fullwidth container. As regards the gallery you can not add image in the post and convert to gallery. You will have to set the images in VC options.

what about default image dimensions?
The Demo uses 1920 by 750 .
