We add those particular texts to the Page Header Metabox. You can find them when you edit the Shop page in the WP Dashboard ->Pages -> Edit Page.

You can maybe use a drawing pointer to point out the different colors that stand out. We would want to get it clearly from the layouts .

Also be sure to add the Category Header Images in here: https://www.staging2.timberwindowsonline.co.uk/wp-admin/term.php?taxonomy=product_cat&tag_ID=131&post_type=product for all Categories that need a different Header.
