The first link is how a post should look. This post was created using the Gutenberg builder and displays the typography according to the styles I set in the Salient settings. Is there a setting I've missed to force WPBakery to use the Salient typography styles?
Disabling the Gutenberg Editor is not an option for us as some of our contributors use it to create their posts. Is there any other possible fix for this?
It appears that the typography styles I've set in the Salient settings are lost when I use WPBakery to build a post. You can see the differences here:

Please turn off the Gutenberg Editor as it's not required by Salient and is likely causing the issue.

I am afraid, Salient theme is not compatible with Gutenberg editor.
