I wanted to customize my blog home page (currently here: https://www.hyrestaff.com/blog/) and making a new page for the blog that has horizontal tabs, hero section and a newsletter sign up form.
I set up a new page for the updated blog design here: https://www.hyrestaff.com/blog-test/ but I'm not sure how I can get the /blog link to the new blog page and use the /blog slug for the updated page since it seems like the /blog page is created automatically? (ie: not set up on the pages section)
I've tried removing any settings on the salient panel for the blog and editing the hyrestaff.com/blog page but it doesn't look like it overrides any of the default theme?

i've been having the exact same issue. any edits get overriden, even when I set a new page as the blog page. Did it work for you @hyrestaff ?

That field needs to be unselected.
