    I am using a mega-menu for the site but I do not like how it breaks down on mobile. Is there a way to either combine 3 columns of the mega-menu since they all have the same header? Or, use a new menu for off-canvas(mobile) menu?

    You can create a new menu and assign to off canvas in the menu section.
