This is not really possible with the current theme settings for woocommerce. They will apply to all product category pages.
What maybe you could do is create a page with the layout you want then use the woocommerce products element from the page builder to pull in products from the specific cateogry you want.
Then use that page as the category page. Hope this is a workable alternative.
Is there any way to set the fullwidth layout to a specific product category and left sidebar for the rest?
