Thank you for getting back to us.
Once you activate the logo, the text should be automatically removed. The plain text you see is generated from the site name which you can see in this article: https://www.yorku.ca/digitalexperiencehub/2020/12/14/changing-your-site-title-and-tagline/.
To remove this, you'd have to delete the site name.
