On the WordPress "Blog" page - where it lists ALL the posts in the masonry grid (with pagination at the bottom), all I want to do is display the page title - which will be either "Blog" or "News" -- it seems simple, but I cannot find where to do that in the Salient Blog Settings. Please help.

Try adding the header in the page header meta box settings in your default blog page to add a header to the blog page.
