Based on my understanding of what Google is saying in the developer link above, there is an attribute named ThumbnailUrl that does not appear in the script on our page as it relates to the videoObject. I can view source on our site and see the VideoObject and the links to the video file but we do not have the thumbnailurl value.
I was just wondering if this is something that I need to set or is it maybe a future capability that might be considered in a later release. This is a new error for us but the site has not changed. I don't understand the backend as well as your team. Not the end of the world if not solved.

You need to add additional structured data to remove those errors. Please refer to this guide: Google Structured Data for Videos.
You can add JS scripts in the Salient Theme Options Panel as shown in the attached screenshot :
