Salient is Gutenberg‑ready in the sense that you can use the block editor for your own pages/posts if you prefer. However, the theme is built around the bundled Salient WPBakery Page Builder, and that plugin is required - especially for demo content and many of the prebuilt layouts to work correctly.​
If you'd like, you can keep WPBakery installed (to avoid shortcode issues and to edit any existing Salient/WPBakery pages) and still create new pages with Gutenberg where it makes sense.
