First of all, excellent work, the theme is awesome and full of options :)

I am trying to translate to Spanish some strings of the theme that aren't translated using Loco Translate, however I have found some issues.

I can't really understand your languages files structure, you are not providing .po archives for each language don't you? just .mo archives? 

There are a lot of strings that are included in the theme template language file "themes/salient/lang/default.po" but they are not included in the spanish .mo file (for example "Next project" or "view larger"), and as you are not including the po files for each language, I can't edit it.

There is a way to translate these strings to other languages?

Solved!

It seems that Loco Translate doesn't assign the bundle template right (it seems because of the path or the name of the file: .po instead of .pot)

I have modified the salient bundle settings, changing the path of the template to the correct path: lang/default.po

And after that I can create a new language with the full strings in it.
